GABA Oolong owes its name to an unusual production process: instead of being aerated as usual, the freshly picked leaves are processed in an oxygen-free environment, in a vacuum or under a nitrogen atmosphere. This anaerobic process converts a large portion of the glutamic acid contained in the leaves into gamma-aminobutyric acid (GABA), a naturally occurring amino acid.

In terms of flavor, GABA Oolong differs significantly from classic Oolong. The cup usually shows a strong, amber to reddish color. At first, a gentle, often fruity note dominates—many describe it as reminiscent of ripe apricots, plums, or dried fruit—paired with a pleasant, round sweetness. The anaerobic production significantly reduces the perceptible astringency, which keeps the tea remarkably soft and mild, with a slightly buttery finish. Even with a longer steeping time, there is hardly any bitterness. The roasting process can add further malty, slightly spicy, or toasted nuances.
